Try these tasty kabobs on the grill for a heart-healthy cookout treat.

INGREDIENTS:

3 medium green peppers, cut into 1½-inch squares
1½ lb fresh bay scallops
1 pint cherry tomatoes
¼ cup dry white wine
3 Tbsp lemon juice
Dash garlic powder
Black pepper to taste
4 skewers (note: if using wooden skewers, soak in water first)

DIRECTIONS:

  1. Parboil (partly cook) green peppers for 2 minutes.
  2. Alternately thread first three ingredients on skewers.
  3. Combine next five ingredients.
  4. Brush kabobs with wine/oil/lemon mixture, then place on grill or under broiler.
  5. Grill for 15 minutes, turning and basting frequently.
Serves 4 (Serving size: 1 kabob)
