Three-Alarm Chili

Ingredients:
  • 2 jars (16 oz. each) salsa (Chipotle-style or southwestern salsa is recommended)
  • 2 C water
  • 1 can (15.5 oz) black beans
  • 1 can (15.5 oz) pinto beans
  • 1 tsp dried oregano
  • 1 Tbsp olive oil
  • 1 lb extra-lean ground beef
  • Salt and pepper (to taste)
Preparation:
  1. Mix together salsa, water, black beans, pinto beans, and spices.
  2. Brown ground beef in olive oil and add to salsa mixture.
  3. Cook over medium heat until most of the water has cooked off.
*Serve with baked tortilla chips, nonfat Greek yogurt, and/or 2% reduced fat Mexican cheese blend.
